Gluten Free Flour

Gluten Free Flour that actually works seems to be a struggle to find at the best of time.  For the past three years I have been on a healthy lifestyle journey. I call it a journey because even though it does have a starting point it is never ending. I am continually learning new things and improving my health each and everyday.

I have a huge sweet tooth so one of the most difficult things for me was ditching the sweets. I love it all: cookies, muffins, brownies the list goes on. At first, I was very discouraged but then I thought there has to be a better way.

I started researching and experimenting ways to make healthy baking. My kitchen was a mess for weeks!!! Very quickly I found it easy to replace sugar with either honey, agave or maple syrup and getting rid of the oil or butter was fairly simple as well and now I only use unsweetened apple sauce.

I felt very successful in making those conversions but was frustrated because I could not find a gluten-free flour that baked the same as the conventional, highly processed white flour. I tried everything on the shelf but I kept getting baking that was too dense, that didn’t rise or reminded me of eating a rock or rubber. Not only was the baking not turning out but the conversions seemed ridiculous and I could never get them right.

Finally, I tried baking with Complete Truth Protein and what a relief that was. It bakes up the same as regular flour, it’s a one-one conversion and it tastes great!

Below I have created a healthy baking cheat sheet to assist you in converting any recipe into a healthy snack!

Sweetness is preference so if you like your baking extra sweet add more honey.

Conversions

1 cup flour- 1 cup Complete Truth Protein

1 cup sugar- 1/2 cup honey (use 3/4 cup of honey if you like it extra sweet)

1 cup butter- 3/4 cup unsweetened apple sauce

 

If you’re looking for an easy recipe to start with try making these Banana Chocolate Chip Muffins. You won’t be disappointed.

 

Ingredients
1 cup Complete Truth Protein
1/4 cup ground flax seed
1/2 cup oat bran or rolled oats
2 tsp. baking powder
1/2 tsp. salt
1/4 cup honey
1/4 cup organic unsweetened apple sauce
1/2 cup almond milk
1 tsp. vanilla
3 mashed bananas
1/2 cup chocolate chips (I used GMO free)

In a large bowl, mix all dry ingredients. Make a well in the center and combine honey, applesauce, almond milk and vanilla. Stir well. Fold in bananas and chocolate chips. Bake at 350 degrees for 15-20 minutes.
