Joelle’s Raw Food Recipe

Joelle’s raw food recipe recently won our challenge.  I just want to personally thank Joelle Paleologou for taking the time to send in her beautiful raw food recipe, and to congratulate her on winning a 30 min consultation with myself.

4 – Organic – vine ripe tomatoes
1c – organic Basil (more or less to taste)
1c – sun-dried tomatoes soaked in olive oil and garlic  ( I keep this in the fridge as a steady ingredient for different things)
1/4c – olive oil
5 pitted dates
1-1/2 tbsp chilli powder
1 tbsp – Raw Mesquite powder
3 tbsp oregano
1/2 tsp salt.
Add more or less seasonings to taste.  If you are using sun-dried tomatoes soaked in water, you will need to add more oil and additional garlic to taste.
I put all ingredients into a food processor and process to desired consistency.  Toss onto  Zucchini noodles and top with pine nuts and fresh chopped basil or parsley.
Or use it as a spread or dip for veggies.  (see photo below)
Also,  I find the seasonings and dates vary according to how sweet the tomatoes and basil are… different times of the year the taste varies with these ingredients I find….especially the tomatoes.
